Blissful Blueberry Muffins

I love a good blueberry muffin ANY time of the day.  Problem is, most muffins have 500 calories in each one and are loaded with fat.

If you’re like most people, a 500 calorie muffin simply doesn’t fit into your daily diet if you are trying to slim down.

The good thing is, I’ve created this recipe that is not only delicious, but packed with protein and very little fat. They are super healthy, loaded with fiber, and all for 108 calories for a BIG muffin!  Best part is, they are YUMMY!

 Ingredients:
1/2 cup Almond Flour
1/2 cup Brown Rice Flour
1 cup Liquid Egg Whites
1 cup Unsweetened Almond Milk
1/4 cup Coconut Flour
2 scoops Vanilla Protein Powder
1 cup Plain Greek Yogurt
1 1/2 cups Blueberries
1/4 cup Sweetener of Choice
1 tsp Pure Vanilla Extract
1 tsp Baking Powder

Method:
Mix all of the ingredients in a bowl except the blueberries.
When the batter is smooth and creamy, then fold in the blueberries.  Spray a muffin tin or use lines.
Bake 350 degrees for 20 minutes.
Makes 12 muffins

100 cal;
3.1 g fat; 10.5 g carbs; 9.0 g of protein; 2.2 g fiber
