These are incredibly healthy and incredibly delicious!  Cauliflower is loaded with vitamins and lots of fiber,  which keeps you fuller longer, and this recipe is such an easy way to get your veggies in!

Pulse about a half head of cauliflower in cuisinart to rice consistency, transfer to a bowl, cover, and microwave for 6 minutes.

Cool the cauliflower, then place it in a cheese cloth and wring it to remove all the water and moisture from the cauliflower (this is key to a successful muffin).

Mix in 1 egg and 1/2 cup cheese (I used 1/4 cup cheddar and  1/4 cup mozzarella) a sprinkle of parmesan cheese,  salt, pepper, garlic powder and oregano. Bake 400 for 15 minutes in muffin cups.

Anyone else ever made these? I love to top them with marinara sauce for a “pizza” muffin. (you can add a bit of extra mozzarella on top too if you fancy!)

Keeping it low fat? Make the cheese low fat cheese.
