Trying to stay on your diet but want a really satisfying meal? Try my BBQ pulled chicken.
The sauce is homemade so it is going to be a lot less sugar than a jar of barbecue sauce (but feel free to use a bottled sauce if you want. I like Stubbs).
Place 4-5 boneless chicken breasts in the crockpot
Mix the following ingredients together in a bowl:
3/4 Cup Ketchup (reduced sugar by Heinz)
1/2 Tablespoon apple cider vinegar
1 1/2 Tablespoon Lea & Perrins Worcestershire Sauce
1 Tablespoon Mustard
3/4 teaspoon Garlic Powder
1/2 teaspoon chili powder
1/2 teaspoon hot sauce
Pour the sauce over the chicken breasts and cook on high for 4 hours. Pull chicken apart with fork when done.
Serve as a sandwich, as lettuce wraps, in a quesadilla or over a salad! All are excellent choices!
