I threw this recipe together on a Sunday afternoon while the family was watching football.  I already had the chicken prepared, so it was especially quick and easy.

To make the chicken ahead of time head over to my Crockpot Salsa Chicken recipe.  You can omit the taco seasoning and save the packet for the chili.

A delicious, healthy and easy meal that the entire family will love.

Ingredients:

  1. 2 lbs Shredded Chicken
  2. 2 tsp Olive Oil
  3. ¼ cup Diced Onion
  4. 1 can Diced Tomatoes
  5. 1 can Black Beans
  6. 1 Packet Chili Seasoning
  7. 1 TBs Cumin
  8. Salt & Pepper to taste

Place olive oil in a medium saucepan and cook onion until it takes on a clear, opaque look.

Add diced tomatoes, black beans, chicken, taco seasoning, cumin and salt and pepper to pot. Bring to a boil.  Then, simmer for about 15-20 minutes.

Serve with chips, cheese and sour cream (or for extra protein replace sour cream for Greek yogurt).
