Here’s the recipe:
2 cups of old fashioned rolled oats
1 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1/2 cup Stevia in the raw
4 eggs whites
1.5 cups unsweetened almond milk
1/4 cup plain Greek yogurt
4 oz unsweetened applesauce
2 sliced bananas
4 sliced strawberries
(you can substitute any berries or fruit you like)
***For a protein packed snack add 4 scoops of vanilla whey protein powder to the dry ingredients bowl. (If you use the protein powder it will come out more like a cake rather than a gooey bake – just as delicious!)
In a Medium bowl mix together dry ingredients. In another medium bowl mix together wet ingredients except fruit. Spray an 8×8″ pan. Layer some bananas on bottom of pan. Mix wet ingredients with dry ingredients. Pour batter on top of bananas and add berries and the rest of the bananas on top of batter. Bake at 375 degrees for 40 minutes if you use the protein powder, 30 minutes if you don’t. Top should be golden brown. Makes 4 servings.
